304 stainless steel is widely used and works well. It will be an advantage if they are sharp.
316 is a better grade, but not so often in blades. It is also a little harder to sharpen.
All of them are a good choice.
Steel as the best bid or steel as a material for the knife? Like I said steel surgical equipment is good, because at best deer hunting knife, or search for Kershaw knives.
